Technically you should write the letter before you quit. Just a professional tone to the letter stating your reason for choosing to leave the company. If it was b-cuz you found another job with better hours and/or pay or any other positive reason, they can use that info when figuring out their turnover rate. If it was b-cuz of a negative reason, you will have to decide if it is something that the boss should be aware of or not (like personality conflict with coworker or fear of roaches crawling on your equipment)..
