How to change my name legally?

You do technically have a first name. It's either "Female" or "Baby Girl". The hospital wouldn't have left it blank.. . The way to fix it is to file a petition to amend your birth certificate. The Community Health office in Yavapai County will have to help you on the process. You'll need things like your school records to show that you have been using whatever name.

I had my will done up and I have to bring in my power of attorney to sign the papers. Is this standard procedure because I never had to sign anything when he did his will and I am power of attorney for my husband.

A power of attorney is NOT a will and has no effect on the transfer of property following death. Whether or not your grandmother gets those things depends on her S-I-L's will (if any), trust (if any), and her place in the intestate succession scheme in the relevant jurisdiction.
