Without knowing the state/province/country you work in, it's difficult if not impossible to give you a valid answer. Each state/province/country has it's own laws that govern employment.. . That said, if you are in the US, and the job you have accepted would be classified as "work-at-will", then an offer letter stating the terms that you accept is pretty standard.. . An offer letter is not a contract per se, but could be used to show a mutual understanding of the conditions of employment and compensation, depending on how it's written.

If you don't do it through the court, you will have to continue to use your current name on all official documents, like drivers licenses, social security, passports, etc although you can list your preferred name as a nickname.
